Thai-style Chicken and Vegetables (meat) serves 4 to 6

Ginger and lime juice infuse this chicken dish with exotic taste and aromas. If you prefer, chicken skin may be removed before the marmalade mixture is poured over.
1/4 cup orange or lime marmalade 1/4 cup fresh lime juice 1/4 cup snipped chives 2 teaspoons ground ginger 1 (16-ounce) package fresh mixed vegetables, rinsed 1 roasted chicken from the deli, quartered
In a small bowl, mix marmalade, lime juice, chives and ginger. Microwave for 40 seconds at High or until marmalade is almost melted. Stir to mix. Place vegetables in a medium size, shallow, microwave dish. Stir in half the marmalade mixture.Cook in microwave for 2 minutes at High. Pierce chicken a few times, then arrange , skin side up, over vegetables. Drizzle with remaining marmalade mixture. Cover loosely with plastic wrap. Microwave at High for 2 to 3 minutes longer until heated through. Serving suggestion: warm garlic bread or fluffy couscous.
