Confetti Slaw (pareve) serves 4 to 6

Be sure to buy the mayonnaise-free slaw, usually labelled as Healthy Slaw.
1 (6.5 ounce) jar marinated artichoke hearts, undrained 2 cups shredded broccoli 2 cups shredded carrots 1 1/2 cups (about 3/4 pound) prepared healthy cabbage slaw, drained 1/3 cup dried cherries or dark raisins 2 tablespoons lemon juice 3/4 teaspoon Tabasco sauce or to taste
Cut each artichoke piece in half and place in a large bowl along with its juices. Stir in the broccoli, carrots, healthy cabbage slaw, cherries or raisins and lemon juice. Season to taste with Tabasco sauce. Serve chilled or at room temperature. Serving suggestion: with fish, poultry, meats or tuck into sandwiches instead of lettuce
