Pasta Turkey Bake for Two (meat)
A mayonnaise-free pasta salad such as pasta primavera or spinach tortellini should be purchased for this dish. The recipe may be doubled.

1 tablespoon vegetable oil 6 ounces ground turkey 1/2 teaspoon poultry seasoning salt and pepper to taste 3/4 pound prepared pasta primavera 1 egg, beaten 2 medium tomatoes, thinly sliced

In a small skillet, heat oil over medium heat. Add the turkey and cook, stirring often, until all traces of pink have disappeared. Stir in seasonings to taste. Set aside.

Preheat oven to 375F. Spray a 1 1/2 quart baking dish with non-stick vegetable spray. Spread half the pasta over bottom of dish. Top with the turkey mixture. Pour the egg over and cover with remaining pasta. Arrange tomatoes attractively around edge of dish.

Bake in preheated oven for 15 minutes or until pasta is beginning to brown at edges.

Serving suggestion: iceberg wedges with a few chopped black olives scattered over.
